Vegan Chocolate Chip Banana Bread

Ingredients

  • 1 3/4 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1/8 tsp nutmeg

  • 3 overripe medium-sized bananas (~1 cup mashed)

  • 1/3 cup vegetable oil

  • 1/4 cup non-dairy milk

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 1 tsp vanilla extract

  • 1 block of Lindt 90% Chocolate

Directions

  1. Preheat the oven on bake at 180 degrees. Grease a 9”x5” loaf pan.

  2. In a medium mixing bowl, add the flour, baking soda, baking powder, cinnamon, nutmeg and salt. Whisk to combine.

  3. Mash the bananas in a large mixing bowl. Add the oil, milk, sugars and vanilla and mix to combine.

  4. Fold the dry mixture into the wet. Mix in the chocolate chips.

  5. Pour into the prepared loaf pan. Bake for 58-62 minutes, until a toothpick inserted into the center comes out clean or with just crumbs, no raw batter.

  6. Allow to cool at least 15 minutes before removing from the pan. Slice and serve!
