Toasted Chia & Seed Trailblazer Granola

This Toasted Chia & Seed Trailblazer Granola is a crunchy, nutrient-dense blend of rolled oats and heart-healthy seeds, lightly sweetened with honey and infused with cinnamon for a wholesome, high-fiber breakfast staple.

Ingredients

  • 2 cups rolled oats (or GF)

  • 1/2 cup natural nuts

  • 1/2 cup dried fruit

  • 1/4 cup chia seeds

  • 1/2 cup seeds (pumpkin and sunflower are good)

  • 5 Tbsp coconut oil, melted

  • 2 Tbsp honey (or maple syrup)

  • 2 tsp cinnamon

Directions

  1. Preheat your oven to 180°C and line a large baking tray with baking paper to prevent sticking.

  2. In a large mixing bowl, toss together the rolled oats, nuts, chia seeds, pumpkin seeds, sunflower seeds, and cinnamon until well combined.

  3. Pour the melted coconut oil and honey (or maple syrup) over the dry mixture. Stir thoroughly until every oat and seed is lightly coated.

  4. Spread the mixture in an even, thin layer onto the prepared tray. Bake for 10–15 minutes, tossing halfway through to ensure it toasts evenly and doesn't burn.

  5. Remove from the oven when it's golden brown. While it's cooling, stir in the shredded coconut and the dried fruit.

  6. Allow the granola to cool completely on the tray (this is the secret to those crunchy clusters!). Transfer to a sealed airtight container; it will stay fresh and crunchy for 10–12 days.
