Homemade Pad Thai
This Pad Thai brings restaurant-quality flavour to your kitchen, made with simple supermarket ingredients. With silky noodles, a balance of sweet and savoury, crunchy peanuts, and a zing of lime, it’s a Thai favourite made easy.
Ingredients:
800g lean Chicken breast (raw weight) (sliced into pieces)
20g Soy Sauce
2 tsp garlic powder
1 tsp chilli flakes
2 tsp black pepper
2 tsp olive oil (for cooking)
4 Garlic cloves, chopped
1 Medium Onion, chopped
1/2 cup green onion, chopped (keep 1/4 cup)
3 whole eggs
400g Cooked Rice Noodles
1 bag bean sprouts
30g crushed peanuts (optional)
Chilli flakes
Extra lime juice
The Sauce:
30g Soy Sauce
40g Tamarind Paste
30g Honey
5g Fish Sauce
15g Siracha
1-2 Limes, Juice only
Directions:
Place noodles in a large bowl, pour over plenty of boiling water. Soak for 5 minutes, then drain in a colander and quickly rinse under cold water. Don’t leave them sitting around for more than 5 – 10 minutes.
Mix Sauce in small bowl.
Heat 2 tbsp oil in a large non stick pan (or well seasoned skillet) over high heat. Add garlic and onion, cook for 30 seconds.
Add chicken and cook for 2 minutes until mostly cooked through.
Push to one side of the pan, pour egg in on the other side. Scramble using the wooden spoon (add touch of extra oil if pan is too dry), then mix into chicken.
Add bean sprouts, noodles, and then the Sauce.
Toss gently for about 1.5 minutes until Sauce is absorbed by the noodles.
Add garlic chives and half the peanuts. Toss through quickly then remove from heat.
Serve immediately, sprinkled with remaining peanuts and lime wedges on the side, with a sprinkle of chilli and a handful of extra beansprouts on the side if desired (this is the Thai way!).
Squeeze over lime juice to taste before eating.
Cooking Notes:
The Pad Thai sauce has to be a little thick so adjust with more tamarind paste, if required. The sauce should not be too water when adding to the noodles. Add the garnish when ready to serve. Distribute into 4 equal servings. Reheating using the microwave or in a pan.
